April, 2009 - The OSU Extension is concerned about your health! Offices in Fulton and Defiance County are getting ready for a program called "Dining with Diabetes" but it has a lot of good information for everyone. In this program we talk about portions, healthy eating habits and the role that exercise can play in the life of a person with diabetes. We'll even show you a couple of quick and tasty recipes that anyone can make that are "diabetic friendly." |

Blueberry Almond Waldorf Salad ¼ cup sliced almonds ¼ cup plain low-fat yogurt 1 teaspoon honey ½ teaspoon whole grain or regular Dijon mustard 1 large Gala, halved, cored, cut into ½ inch pieces 1 large Golden Delicious apple halved, cored, cut into ½ inch pieces ½ cup fresh blueberries 2 cups baby spinach
Place almonds in small, nonstick skillet over medium low heat. Cook 3 to 4 minutes until lightly toasted, stirring often. Transfer to plate to cool. Stir yogurt, honey and mustard in large bowl until smooth. Add apples, blueberries, spinach and almonds and toss to coat. Serve immediately. Makes 4 1 cup servings. |
Breakfast casserole 3 cups sourdough bread cubes 1 jar (12 ounces) roasted red pepper strips, drained 1 cup shredded reduced-fat sharp Cheddar cheese 1 cup shredded reduced-fat Monterey Jack cheese 1 cup fat-free cottage cheese 12 ounces cholesterol-free egg substitute 1 cup fat-free (skim) milk ¼ cup chopped fresh cilantro
¼ teaspoon black pepper
2. Place cottage cheese in food processor or
blender; process until smooth. Add egg substitute; process 10
seconds. Combine cottage cheese mixture and milk in small bowl; pour
over ingredients in baking dish. Sprinkle with cilantro and black
pepper. Cover; refrigerate 4 to 12 hours. |

We also talk about farm profitability and give you some good benchmarks to use when measuring how profitable your farm is. |

People who go through the Master Gardening courses with the OSU Extension Offices are not only people who like to garden, they enjoy giving back to their respective communities. On this month's program, we'll talk to some of Defiance County's Master Gardeners from Hicksville, Sherwood and Defiance City. How did they get started? What projects have they been involved in? November, 2008 - This month we'll take you to the annual 4-H Career Day that was held at the Four County Career Center. They just don't teach economics like this in some schools anymore. This is a "real world" type of exercise that takes students through an imaginary career path and puts them in a situation where they have to budget their income, pay bills and only spend within their means. We'll hear from several participants about what they learned as they went through this eye-opening process. |

October, 2008 - Along with our struggling economy, home foreclosures are on a dramatic rise throughout the state and in our immediate area. This month, The OSU Extension Report takes you to a special event recently held at the offices of First Call for Help in Napoleon. We'll hear from Richard Cordray, Treasurer for the State of Ohio, and other local agencies about the problem and where people can go for help when faced with the potential of foreclosure. Mr. Cordray's online segment includes additional information we didn't have time for in the broadcast version of this program. |
